Ingredients
1 pack organic medium-firm tofu
2 tsp onion granules
1 inch piece ginger, peeled and minced
2 cloves garlic, minced
2 tbsp tamari
2 tbsp mirin
1/2 cup date syrup or rice syrup
1 tbsp lemon juice
1 tbsp ume plum vinegar
1 heaped tbsp kuzu
1 cup filtered water
Fresh coriander, for garnish
White sesame seeds, for garnish
Spring onions, for garnish
Lime slices, for garnish
Description
Bite-sized tofu cubes simmered in a glossy, sticky teriyaki-style sauce made with tamari, mirin, ginger, garlic, syrup, lemon juice, ume plum vinegar, and kuzu. Serve with organic grains, steamed broccoli, and julienne carrots for a simple, satisfying meal.
How-to? Steps
Step 1: Prepare the tofu
Remove the tofu from its packaging and cut it into equal bite-sized cubes.
Step 2: Make the sauce
Place the onion granules, ginger, garlic, tamari, mirin, syrup, lemon juice, and ume plum vinegar into a wok.
Step 3: Add the kuzu
Combine the kuzu with the filtered water until smooth, then stir it into the wok.
Step 4: Thicken the sauce
Bring the sauce to a simmer, cover, and cook for 5 minutes, stirring frequently, until thickened.
Step 5: Cook the tofu
Add the tofu pieces to the sauce, gently stir through, cover, and simmer for 5 minutes until sticky.
Step 6: Serve
Serve with cooked organic grains, steamed broccoli, and julienne carrots. Garnish with coriander, sesame seeds, spring onions, and lime slices.
