Ingredients

3 cups cooked short-grain brown rice

1 large red onion, diced

1 bunch spring onions, thinly sliced

2 cloves garlic, minced

3 cups finely diced fresh button mushrooms

1 tbsp mixed seasoning

1 tbsp turmeric

1 tsp sweet paprika

1 tbsp tamari

2 carrots, grated

½ cup tightly packed fresh coriander

1 heaped tbsp umami paste with ginger

3 tbsp nutritional yeast

3 tbsp shelled hemp

3 tbsp white sesame seeds

1½ cups ground almonds, plus more if needed

Description

Crispy baked grain patties made with short-grain brown rice, mushrooms, onions, spring onions, carrots, herbs, spices, umami ginger paste, hemp seeds, sesame seeds, nutritional yeast, and ground almonds. Golden on the outside and hearty inside, they make a satisfying plant-based main.

How-to? Steps

Step 1: Prepare the oven

Preheat the oven to 200°C/400°F.

Step 2: Cook the vegetables

Warm a splash or two of water in a heavy-based pan. Add the onion, spring onions, garlic, mushrooms, herbs, and spices. Cover and cook for 10 minutes, then stir in the tamari.

Step 3: Mix the patties

In a large bowl, mix the cooked brown rice with the cooked vegetables. Add the grated carrot and coriander, then stir in the umami paste and adjust seasoning to taste.

Step 4: Bind the mixture

Fold in the nutritional yeast, shelled hemp, sesame seeds, and ground almonds. Press the mixture together with a wooden spoon. If it does not bind, add more ground almonds until cohesive.

Step 5: Shape

Wet your hands and form heaped tablespoons of mixture into patties, moistening your hands each time to prevent sticking.

Step 6: Bake

Place the patties on a parchment-lined baking sheet and bake for 15 minutes on each side, or until crisp on the outside.
