Ingredients

4 organic apples

4 organic pears

A little water or apple juice, for cooking

Organic oat cream, optional topping

Blueberries, optional garnish

½ cup cashews, soaked overnight

½ cup rice or oat milk

¼ cup water

3 Medjool dates, pitted

1 tsp lemon juice

½ tsp vanilla extract

Description

A simple pear and apple sauce served with a creamy cashew date cream. Naturally sweet, soothing, and versatile, it can be enjoyed warm or chilled as a light dessert or daily fruit staple.

How-to? Steps

Step 1: Prepare fruit

Wash and peel the apples and pears. Remove the cores and slice into bite-sized chunks.

Step 2: Cook fruit

Place the fruit in a pot with a little water or apple juice. Simmer, covered, over very low heat until soft. Alternatively, cook in an Instant Pot for 7 minutes and allow natural release.

Step 3: Blend or mash

Mash with a potato masher, blend in an upright blender, or use a stick blender until the desired texture is reached.

Step 4: Make date cream

Drain the soaked cashews and place them in a high-speed blender with rice or oat milk, water, dates, lemon juice, and vanilla. Blend until creamy, adding more water as needed.

Step 5: Serve

Serve the fruit sauce in a glass topped with date cream, oat cream, or a blueberry for decoration.

Use them together or use them separately.  We adore applesauce, and it’s a daily staple in our home. I always have this tasty dessert in glass jars in the fridge, and it’s super for taking the edge off any sugar cravings. Pears are a high-fibre, low-calorie snack, and they contain twice as much fibre as apples. I also slice both these fruits into salads, roast or bake whole for dessert.
