Ingredients
1 x 300 g pack silken tofu
½ cup cashews
⅓ cup rice syrup
1 tsp vanilla extract
1 tbsp lemon juice
4 cups blueberries
4 Medjool dates, pits removed
1 cup apple juice
2 tbsp agar flakes
Description
A layered blueberry kanten dessert with silky tofu vanilla cream. Made with blueberries, dates, apple juice, agar-agar flakes, silken tofu, cashews, rice syrup, vanilla, and lemon, it is a refreshing plant-based treat for gatherings or make-ahead desserts.
How-to? Steps
Step 1: Make tofu cream
Drain the liquid from the tofu. Blend the silken tofu, cashews, rice syrup, vanilla extract, and lemon juice until very smooth. Refrigerate for at least 1 hour before serving.
Step 2: Prepare blueberries
Set aside 1 cup blueberries for garnish and layering. Place the remaining 3 cups blueberries and dates in a blender.
Step 3: Cook agar
In a small saucepan, bring the apple juice and agar flakes to a boil. Reduce to low and simmer for 5 minutes, stirring occasionally.
Step 4: Blend kanten
Add the hot agar mixture to the blender with blueberries and dates. Blend until creamy.
Step 5: Set
Transfer to a bowl and chill in the fridge for 30 minutes to set.
Step 6: Layer and serve
In pretty glasses, layer blueberry kanten with tofu cream until full. Garnish with blueberries.
