Ingredients

3 cups organic natural soya drink

½ cup brown rice syrup

1 vanilla pod

2 tbsp kuzu

3 tbsp water

Description

A thick, creamy, pourable vegan vanilla custard made with organic soya drink, brown rice syrup, vanilla pod, and kuzu. Smooth and lightly sweet, it works beautifully with fruit desserts, puddings, or cakes.

How-to? Steps

Step 1: Prepare vanilla

Slice the vanilla pod lengthwise and scrape out the seeds.

Step 2: Heat custard base

Place the soya drink, brown rice syrup, vanilla pod, and seeds into a small pot. Bring to just below a slight boil, reduce heat, and simmer for 15 minutes.

Step 3: Add kuzu

Thoroughly dissolve the kuzu in the water and add it to the pot.

Step 4: Thicken

Stir until the texture changes and the cloudiness clears.

Step 5: Cool and store

Turn off the heat. Pour into glass containers and allow to cool before storing in the fridge.
