Ingredients
1 cup millet
2 cups filtered water
½ cup organic smooth unsalted peanut butter
1 tbsp tamari, for peanut sauce
1 tbsp brown rice vinegar
1 tbsp freshly squeezed ginger juice, for peanut sauce
1 clove garlic, for peanut sauce
¼ cup brown rice syrup, for peanut sauce
½ cup warm filtered water, for peanut sauce
200 g pack tempeh
2 tbsp tamari, for tempeh
2 garlic cloves, minced
1 tbsp freshly squeezed ginger juice, for tempeh
Juice of 1 lemon
2 tbsp brown rice syrup, for tempeh
¼ cup water
¼ cup white sesame seeds
Red radishes, thinly sliced, for garnish
Steamed greens, to serve
Description
A nourishing millet veggie bowl topped with sesame-crusted tempeh and a creamy sweet peanut sauce. The tempeh is marinated with tamari, garlic, ginger, lemon, and rice syrup, then baked until crisp and golden.
How-to? Steps
Step 1: Cook millet
Toast the millet in a dry saucepan over medium heat for 4–5 minutes until golden and fragrant. Add the water, stir, bring to a boil, then lower the heat and simmer covered for 15 minutes. Remove from heat and keep covered for another 15 minutes. Fluff with a fork.
Step 2: Make peanut sauce
Blend the peanut butter, tamari, brown rice vinegar, ginger juice, garlic, brown rice syrup, and warm water until creamy. Add more water for a thinner consistency and set aside.
Step 3: Marinate tempeh
Preheat the oven to 190°C/375°F. Cut the tempeh into ½ inch slices and place in a flat glass dish. Whisk together tamari, garlic, ginger juice, lemon juice, brown rice syrup, and water, then pour over the tempeh. Cover and refrigerate for 30 minutes.
Step 4: Coat tempeh
Put sesame seeds into a shallow bowl. Remove tempeh from the marinade and dip each side of each piece in sesame seeds.
Step 5: Bake tempeh
Place tempeh on a parchment-lined baking sheet. Bake for 10 minutes, turn over, and bake another 10 minutes until crisp and golden.
Step 6: Serve
Serve on a bed of millet and steamed greens. Pour over peanut sauce and garnish with thinly sliced red radishes.
