Ingredients
2 cups strawberries, washed and sliced
1 cup rice milk
1 cup apple juice
3 heaped tbsp agar-agar flakes
2 heaped tbsp kuzu
¼ cup cold water
¼ cup rice syrup
Mint leaves, to decorate
Fresh strawberries, to decorate
Description
A naturally sweet strawberry pudding made with organic strawberries, rice milk, apple juice, agar-agar flakes, kuzu, and rice syrup. Light, refreshing, and gently set, it is best chilled overnight and served with mint leaves and fresh strawberries.
How-to? Steps
Step 1: Heat the liquids
Put the rice milk and apple juice into a small pot. Add the agar flakes and bring to a slow boil, stirring occasionally.
Step 2: Dissolve agar
Simmer for 5 minutes, or until the agar flakes melt.
Step 3: Add kuzu
Dissolve the kuzu in the cold water and slowly stir it into the mixture. Stir well to avoid lumps.
Step 4: Thicken
Simmer for 5 minutes, until thickened. Add the rice syrup and stir well.
Step 5: Set
Spread the strawberries on a flat baking dish. Pour the hot liquid over the top and allow it to cool.
Step 6: Chill and serve
Chill in the fridge overnight. Serve decorated with mint leaves and fresh strawberries. Use agar-agar flakes, not agar powder.
