Ingredients
2½ cups oat or brown rice milk
½ cup finely shredded coconut
7 or 8 organic pitted plump prunes
¼ tsp pure vanilla extract
½ cup chia seeds, divided
Fresh raspberries, for garnish
Coconut chips with cocoa, for garnish
Description
Creamy coconut chia pots made with oat or brown rice milk, shredded coconut, prunes, vanilla, and chia seeds. Finished with fresh raspberries and cocoa coconut chips, they make an easy chilled dessert or parfait.
How-to? Steps
Step 1: Blend
Blend the milk, shredded coconut, prunes, vanilla, and ¼ cup chia seeds in a high-powered blender. Add more milk if needed to adjust consistency.
Step 2: Stir
Add the remaining ¼ cup chia seeds and stir well.
Step 3: Chill
Pour into serving cups and refrigerate until set.
Step 4: Serve
Top with fresh raspberries and coconut chips before serving.
Step 5: Variation
For a parfait, alternate layers of berries with pudding in a glass. For chocolate chia pudding, blend in 2 tbsp natural cocoa powder and add an extra ¼ cup plant milk if needed.
