Ingredients
2 cups apple juice or apple-pear juice
2 cups oat or rice milk
Zest of 1 lemon
2 tbsp lemon juice
4 heaping tbsp agar flakes
2 heaping tbsp kuzu
Water, for making kuzu paste
1 tsp vanilla essence
⅓ cup Clearspring brown rice syrup
Description
A light, fluffy vegan lemon mousse made with apple juice, oat or rice milk, lemon zest, lemon juice, agar flakes, kuzu, vanilla, and brown rice syrup. Set, blended until smooth, and chilled again, it creates a velvety citrus dessert.
How-to? Steps
Step 1: Cook agar base
Bring the apple juice, plant milk, lemon zest, and agar-agar flakes to a boil in a saucepan.
Step 2: Dissolve agar
Reduce heat to low and simmer for 5 minutes, until the agar flakes dissolve.
Step 3: Add kuzu
Make a paste with the kuzu and a little water. Add to the pan, stirring constantly to avoid lumps. Simmer for 5 minutes.
Step 4: Flavour
Stir in the vanilla essence, lemon juice, and rice syrup.
Step 5: Set
Remove from heat, transfer to a dish, allow to cool, then place in the fridge to set. This can be made the night before.
Step 6: Blend and chill
Transfer the set mousse to a high-speed blender and blend until smooth and creamy. Pour into glasses and chill for a few hours before serving.
