Ingredients
3 cups cooked adzuki beans
2 cups pecans
18 plump Medjool dates, stones removed
½ cup cocoa powder
½ tsp vanilla extract
Desiccated coconut, for rolling
1 cup dried adzuki beans, if cooking from dry
Small piece kombu seaweed, for soaking beans
Description
Healthy chocolate bites made with cooked adzuki beans, pecans, Medjool dates, cocoa powder, vanilla, and desiccated coconut. Rich, naturally sweet, high in fibre, and freezer-friendly, these bite-sized treats are perfect for dessert or snacks.
How-to? Steps
Step 1: Cook adzuki beans
If cooking from dry, soak 1 cup adzuki beans overnight with a small piece of kombu seaweed. Drain and place in an Instant Pot with enough water to comfortably cover. Pressure cook for 30 minutes and allow natural release. Drain and cool.
Step 2: Blend mixture
Blend the cooked adzuki beans, pecans, dates, cocoa powder, and vanilla in a food processor until creamy, stopping to scrape down the sides as needed.
Step 3: Shape
Take heaped teaspoons of the mixture and roll into balls, dipping fingers in water as needed.
Step 4: Coat
Drop the balls into a bowl of desiccated coconut and shake until well covered.
Step 5: Chill
Chill in the refrigerator for a few hours before serving. These also freeze well.
