Ingredients
1 bar (90 g) vegan chocolate
300 g pack organic silken tofu
¼ cup date syrup
¼ cup rice milk
1 tbsp lemon juice
1 tbsp white tahini
¼ tsp vanilla extract
Fresh raspberries, to serve
Desiccated coconut, to decorate
Description
Creamy vegan chocolate pots made with melted vegan chocolate, organic silken tofu, date syrup, rice milk, lemon juice, tahini, and vanilla. Chilled until set and topped with fresh raspberries and desiccated coconut, they are rich, smooth, and easy to prepare ahead.
How-to? Steps
Step 1: Blend base
Place all ingredients except the chocolate into a high-speed blender.
Step 2: Melt chocolate
Put a small amount of boiling water in a pot and place a metal bowl on top. Break the chocolate into pieces and melt it in the bowl.
Step 3: Blend smooth
Add the melted chocolate to the blender and puree until creamy.
Step 4: Chill
Divide into small cups and chill in the refrigerator until set. For best results, prepare the day before.
Step 5: Serve
Top with fresh raspberries and desiccated coconut.
