Ingredients

1 cup tricolour quinoa

1 1/3 cups filtered water

1 cup organic sweetcorn

1/2 cup red radishes, wafer-thin slices

1 stick celery, chopped

4 cups iceberg lettuce, shaved

1 avocado, peeled, stone removed and cubed

1/2 cup lemon and basil-coated green olives, chopped

1 tbsp tamari

1 tsp Dijon mustard

3 tbsp rice syrup

2 tbsp lime juice

Water, as needed for dressing consistency

Description

A fresh, protein-rich quinoa bowl with sweetcorn, radishes, celery, shaved iceberg lettuce, avocado, green olives, and a simple sweet mustard dressing. Serve it as a nourishing main dish or a colourful side.

How-to? Steps

Step 1: Cook the quinoa

Rinse the quinoa, then place it with the filtered water in a heavy-based pot. Bring to a simmer, cover, and reduce the heat to very low for 15 minutes.

Step 2: Steam and cool

Turn off the heat and keep the pot covered for 10 minutes to continue steaming. Transfer to a large bowl and allow to cool completely.

Step 3: Make the dressing

Whisk the tamari, Dijon mustard, rice syrup, and lime juice together with a little water to reach the desired consistency.

Step 4: Assemble

Add the sweetcorn, radishes, celery, iceberg lettuce, avocado, and olives to the cooled quinoa.

Step 5: Serve

Mix well and stir in the dressing before serving.
